Ginger & Orange Cheese-Cakes

150g Gingernut Biscuits
500g Cream Cheese
Lemon Rind from 1 lemon
1/4c lemon juice
1/2c orange juice
1/2c caster sugar
Fresh fruit to top
1. Crush the gingernut biscuit into small pieces. There are two ways to do this, first is to put the biscuits into a bag and crush with a rolling pin. The second way is to crush the biscuits in a food processor.
2. Mix the cream cheese, lemon rind, lemon juice , orange juice and caster sugar in a food processor, or in a bowl with a wooden spoon, until smooth. When I made this I also added the rind from the orange and finely chopped crystallised ginger for some extra taste.
3. In a desert glass (I used brandy glasses) first layer the glasses with the gingernut biscuits. Top these biscuits with the cream cheese mixture and chill in the fridge for an hour or so until the mixture is set. Just before eating top with fresh fruit of your choice (I chose mandarins and blueberries but be experimental).
Serve chilled.
